All are welcome to join the NCCA May chapter meeting at the beautiful and historic Cosmos Club in Washington, DC. Host chef, Will Rogers, CEC, CCA will discuss the CMC exam process from his first-hand experience. Douglas Singer from Singer Meats will give a quick tutorial on his exquisitely crafted cured meats program. Food, soda, coffee and tea will be provided.
